Cannelloni is a universal dish, in which any favoured stuffing is placed inside a cylinder, generally of pasta (or lasagne sheets). This version from South American cooking, prefers simple crepes as the carrier. If you prefer pasta as the carrier, the filling method remains the same. A classic of Italian cooking is a simple mix of spinach and ricotta, given a touch of spice with nutmeg.
