The classy Spanish title for this very more-ish dish doesn’t seem so enticing when translated as marinated meat! The beauty of this dish is that it takes you deep into America’s Tex-Mex culture; in this case when the pork is marinated in warm-ish to hot-ish chillis, spices and herbs, then cooked until it falls apart. As with all marinated gently cooked meat dishes, it is better the day after or the day after the day after.
