A superb combination of ground chickpeas, herbs and spices gets a glorious depth of colour from raw beetroot. Falafels are so quick and easy to make in the Thermomix and allow for a great texture that has bite to it without being mushy (make sure you use soaked dried chickpeas only, not tinned).
