Chickpea & Beetroot Falafels with Tahini Sauce

Time: 2 minutes in the Thermomix; overnight soaking; 30 minutes resting; 10 minutes frying
Yield: Serves 6 (about 24 x 35-gram falafels)

A superb combination of ground chickpeas, herbs and spices gets a glorious depth of colour from raw beetroot. Falafels are so quick and easy to make in the Thermomix and allow for a great texture that has bite to it without being mushy (make sure you use soaked dried chickpeas only, not tinned). Once you start making your own, you will never go back to store-bought. These balls of goodness are crunchy on the outside while still soft and moist in the middle, just the way they should be. Paired with a gutsy tahini sauce and a refreshing salad, they are perfect enjoyed in fresh or toasted pita bread.
