Coconut “panna cotta”

A panna cotta is a classic of Italian and French cooking (across the border it’s more like a bavarois). Panna Cotta means cooked cream—in that case a cooked custard. In this recipe, it’s coconut cream flavoured with maple syrup and held together with gelatine. You can create your own coconut cream if you have the time and energy (See note), but the commercial variety also does the job.
