This refreshing cold soup takes its name from chef Arturo Maggi from Latteria San Marco in Milan. It is unlike anything we had tried before. The eight-table eatery, which looks more like Nonna’s kitchen, serves this innovative, not-so-appealing yet incredibly tasty dish. Quality is everything here; the dish is so simple there is nowhere to hide substandard produce. You’ll want the very freshest vegetables to blend with basil, olive oil, salt and pepper, to be served cold like a minestrone soup, then topped with warm bulgur—a perfect candidate for the Thermomix. Bulgur is steamed in the simmering basket in a few minutes and the vegetables are done in just 15 seconds.
