A chocolate cake is a scene stealer, but when served warm, with an oozing chocolate centre, standing ovations will follow. The Sichuan peppercorns provide a gentle hit to the middle palate. Chocolate and chilli make great partners, and so does chocolate and Sichuan pepper. This cake needs to be cooked when guests are ready for a grand finale to any meal—but leftovers, now firmed in the middle, are just as delicious.
