Dried Apricot Souffle

Time: 30 minutes soaking apricots; 15 minutes in the Thermomix; 14–16 minutes baking

This is a simple soufflé using dried fruit. It is beautiful served with thickened cream and a sweet semillon or similar dessert wine. This recipe uses apricots but you can substitute dried pears or apples. This recipe can be both dairy free (use vegetable oil to grease the ramekins) and gluten free.
