Graham Crackers + Whole-Wheat Flour Substitute for Graham Crackers

Because home-made is always better… and because graham crackers are so hard to source in Australia. The easiest way to get your hands on them is to bake from scratch! The closest biscuit to this US staple for anything from breakfast or snack to fancy dessert would be what we know as the digestive biscuit. The main difference is that it calls for a particular whole-wheat flour (known in America as graham flour — see Cathy Gowdie’s essay, page 63) and no oats. Since it is near impossible to get graham flour here, we have included a substitute whole-wheat flour recipe that’s very simple to produce in the Thermomix, and which could also be used as
a substitute to wholemeal flour should you need it in an emergency.
