Honey Bears

These are very simple to make, especially with leaf gelatine. You can use powdered gelatine but it takes longer to dissolve and sets far too quickly, making it hard to get into the moulds in time. It is easy to find moulds for these online. Makes about 60 small or 24 large bears.

30 grams leaf gelatine
cold water for soaking gelatine
1 lemon or lime, zest finely grated
60 grams juice from lemon, lime, grapefruit or sour orange
50 grams honey
1 pinch each ground cinnamon, ginger and turmeric (optional)
  1. Soak gelatine in a large, flat dish of cold water, ensuring sheets are separated.
  2. Place the zest, citrus juice and honey with cinnamon, ginger and turmeric (if using), into the mixing bowl and cook 3 mins/80 degrees/speed 2. Remove gelatine leaves from the water and squeeze out excess water. Add to the mixing bowl then combine 30 seconds/speed 4.
  3. Allow mixture to settle for 2 minutes. Blend again 3 seconds/speed soft then carefully pour into the jelly moulds.
  4. Leave to set. When they are completely non-tacky you can peel them out of the moulds and store in an airtight container.
