Lentil Masala with Spinach & Fried Paneer

Like all things curry, this dish is best made well ahead of time. Make the paste the day before for best flavour—this recipes uses 100 grams but the rest can be frozen for later—and the whole thing can be brought together in no time. Serve it with bread or rice as you wish. The masala tends to get thicker so add more water if you feel you need to.
