Never heard of Nimki? It’s yet another pastry that comes from the sub-continent, and can be either savoury or sweet. It is also known as Namak Para, namak meaning salt. In this case, the salt is given a kick with ground Sichuan peppercorns. Like so many of the snack foods of India, Pakistan and Bangladesh, this simple pastry is fried and generally offered as street food; what is added to the crunch is what makes it so more-ish. A lovely story in The Times Of India says: “…you can also serve it with some mint chutney or dip to make it more delicious, it can make for a perfect snack to binge during movie nights or game nights or any get together for that matter."
