When we were putting together our list of classic Milanese recipes, Osso Buco was an obvious contender. The question was, how do you make it in the Thermomix, bones and all?
Even though it isn’t technically possible to do the whole dish in our favourite machine, the Thermomix lends a skilled hand to the preparation by chopping, sautéing and simmering the sauce. All there is to do is pour it over the seared meat, cover, and braise in the oven while you put the machine to work on an accompanying risotto Milanese, creamy polenta or potato mash. Before serving, it will also blitz a deliciously zesty gremolata to complement this perfect winter warmer. Comfort food in all its glory.
