Shiitake Rosemary & Chickpea Patties with Herbed Vegan Aioli

Time: 8 minutes in the Thermomix; overnight soaking; 30 minutes resting; 10 minutes frying

This dish had everyone in awe during our photo shoot and I must admit I could turn vegetarian if it meant eating only one thing for the rest of my life … that is how enjoyable this is!

These green patties resemble falafels and are similar in their technique of grinding soaked dried chickpeas and green split peas with brown rice and aromatics. The flavours of shiitake mushrooms and rosemary highlight the uniqueness of these healthy balls of goodness — but the magic truly happens once you pair (I mean drown) them with the herbed vegan aioli. It is simply to die for and will make you come back for more again and again … and again!
