This is my favourite kind of food—tasty, healthy, good looking, maximum flavour from minimal effort and easily adaptable so you can serve 12 people or just two. The wonderful smoky flavour of the babaganoush comes from charring the eggplants directly on a flame. This might seem onerous but it is actually very simple and can be done on hob gas burners, grill plate or barbecue. Of course, you can cook your eggplant solely in Thermomix but the charring adds incredible depth of flavour. Depending on how many you are cooking for, there may be babaganoush and salad left over; but that’s never a problem.
