I have been very excited (slightly obsessed) with the possibilities of taking pastry making in the Thermomix to another level. The machine allows you to dry roast spices, chop and mill effortlessly, so in terms of creativity, the sky is the limit when it comes to infuse and add colour to your pastry. I had a vision of a deep red beetroot pastry to jazz up this otherwise traditional tart. Mission accomplished: the result looks spectacular and is sure to intrigue the eye and surprise the taste buds.
