Spring Onion Socca with Spicy Silverbeet

Socca is a pancake made of chickpea flour originally from the Provence area in France as well as Italy’s neighbouring region of Liguria, where it is called farinata. It’s an easy, tasty, vegetarian/vegan and gluten-free dish that certainly does not compromise on flavour. These make a great Sunday brunch, healthy lunch or light dinner. They can be enjoyed on their own, as an accompaniment or with a topping like this one we adapted from award-winning American food writer Tom Philpott’s recipe in Mother Jones: simple, tasty sautéed spicy silverbeet and shaved pecorino.
