Tenina’s Simple Umami Paste

Yield: About one 500-gram jar

This recipe has been around forever now—well, close to forever—and features in all of my books that aren’t dedicated to desserts. This is a simpler version, created in desperation at a Melbourne cooking class when we realised we had left our stash of the precious paste on a plane! No worries—grab the tinned tomatoes and you are good to go. Umami on!

Tenina’s Simple Umami Paste
Ingredients
80 grams parmesan cheese, cubed
3 tablespoons dulse flakes (sea vegetable available at health food stores)
80 grams walnuts, roasted
200 grams chopped tinned tomatoes
2 ½ anchovies
2 tablespoons balsamic vinegar
Method
  1. Place parmesan, dulse flakes and walnuts into the Thermomix bowl and mill 10 seconds/speed 10.
  2. Add remaining ingredients and blend 6 seconds/speed 6.
  3. Spread into an ice-cube tray and freeze until needed.
  4. Pop one or two frozen cubes into dishes as required.
  5. If you don’t freeze it, store in a sterilised jar in the fridge and use within 2 weeks.
