Popular in Central and South America, particularly in Mexico for the Cinco de Mayo (May 5) celebrations, Tres Leches or Pastel de Tres Leches is an easy, light and fluffy sponge cake soaked in—as its name translates—three milks. The milks in questions were originally cream, condensed milk and evaporated milk.

In this recipe we have used milk instead of the cream for a lighter result—but feel free to use cream if you want to stick with tradition. Regardless, expect a perfectly balanced, rich, moist yet cloud-like cake; not soggy, simply divine, and guaranteed to please a crowd.
