Italy is the home of the vegetable soup, which most of us have wolfed down as minestrone. But, note the difference between a minestrone and a zuppa. The difference is that the minestrone is usually bulked up with rice or pasta, and a zuppa is a broth, often thickened with soaked bread. In this variation, Yolaine Corbin suggests serving the bread on the side, but a true zuppa would have the broth poured over the bread, thus replicating the peasant origins of the zuppa.
