A tribute to Snickers

Time: 3 minutes in the Thermomix; minimum 2 hours or overnight in freezer; 15 minutes to coat in chocolate; 30 minutes to set chocolate

We all like to have our cake and eat it too but the after-effects of too much sugar are never fun. The foggy brain, bloated stomach and tiredness can hang around much longer than the taste of that piece of cake, I’m sure you’ll agree. These guilt-free sweet sensations are inspired by the Mars corporation’s classic Snickers bar, which has developed a cult following among pastry chefs paying homage to the Snickers’ sweet and salty choc-caramel-peanut perfection. This tribute version is free from refined sugar and sweetened naturally with plump medjool dates. The dates make up the delicious peanut caramel layer that sits atop a creamy cashew cream nougat base, which is then encased in rich dark chocolate. A little goes a long way, so I suggest cutting the bars into small bite-sized “fun” bars to make them last longer. However, if you’re feeling indulgent cut them into full sized bars. I promise these will be a hit with those already following a sugar-free diet, and with the sugar-free sceptics in your life.
