Ghribias (also known as Ghoribas) are a traditional biscuit from the Maghreb region of northern Africa, often enjoyed with sweet mint tea or Arabic coffee. The texture is crumbly, buttery and shorter than the shortest shortbread, hence the need for a hot bevvy to enjoy with them. A combination of chickpea flour, ghee, sugar, orange blossom flower and a hint of cinnamon will transport you to the colourful narrow streets of a souk market from the first mouthful. Try citrus zest or rosewater as a delicious substitute flavouring if you don’t have orange blossom water, although we highly recommend getting your hands on it.
