Chargrilled Asparagus with Tarator, Almonds & Prosciutto

Yield: 4 as a side dish

Tarator is an all-purpose sauce found in eastern Mediterranean cuisine. There are numerous versions but tarator generally contains nuts, garlic, lemon and olive oil and is excellent with grilled meats, fish or vegetables. In this version, dense sourdough binds the tarator but cold cooked potato will work well for a gluten-free version; just don’t puree it too long or it may become a little gluey. Tarator can be made ahead of time but doesn’t freeze well.
