You can make this in the Thermomix from start to finish but if you have time and inclination we recommend quickly browning the chicken pieces in a pan with some peanut or coconut oil before adding to the mixing bowl at Step 3. A little bit of Maillard reaction (see story page 14) goes a long way in contributing flavour and discourages the chicken pieces from breaking up as they cook. Candlenuts, if you can find them, are widely used as a thickener in Indonesian and Malaysian recipes and must be cooked before eating, as they are in this recipe. Raw candlenut kernels can cause serious illness, especially in children. Macadamia nuts may be substituted for candlenuts. To avoid surprises, remove the cinnamon stick and star anise prior to serving.
