Chickpea & Coconut Fudge Bars

These chickpea and coconut fudge bars are a variant on a popular South Indian sweet called burfi made with chickpea flour, coconut, ghee and milk. This version is adapted from one by cookbook author, blogger and photographer Richa Hingle from—head to her site for a wealth of terrific vegan recipes. The ghee has been replaced by oil and milk to almond milk to make this dessert vegan as well as gluten-free. You can, however, still use milk or ghee but please note the cooking time will vary.
