150 grams castor sugar
2 tablespoons balsamic vinegar
1 tablespoon water
40 grams water
300 grams strawberries, hulled
1 lemon (zest of)
1 tablespoon lemon juice
1 teaspoon citrus pectin
- Heat the sugar, balsamic vinegar and water in the bowl 8 minutes/Varoma/speed 1 with no MC to caramelise.
- Add the strawberries and cook for about 13 minutes/100 degrees/reverse/speed soft with no MC until the strawberries are tender.
- Add the lemon zest and juice as well as the citrus pectin. Continue to heat for 5 minutes/100 degrees/reverse/soft speed with no MC until the mixture has reduced to a thicker jam consistency. Transfer into a sterilized jar immediately, close the lid tightly and allow to cool down at room temperature.
AND … For a more pronounced balsamic flavour, add an extra 2 teaspoons of balsamic vinegar at step 3, in the last minute of cooking.
