This chickpea curry is healthy, low in carbs yet filling, gluten free and does not compromise on flavour—it has the right amount of sweet, sour and heat. The broccoli “rice” is a nice and colourful version of its popular cauliflower cousin and is steamed while the curry is cooking in the Varoma, making great use of the layer-cooking possibilities of the Thermomix.
This curry can be made ahead of time and freezes really well. The broccoli rice, on the other hand, is best made just before serving.
