One of the great features of the Thermomix, I’m sure you would agree, is its power and ability to crush ice in a matter of seconds. No more breaking the blades of endless blenders. The Thermomix makes creating delicious summer drinks like this one easy.
The zesty lime flavour combined with mint and coconut water is so refreshing on a hot summer’s day. Not to mention the beautiful smell of freshly squeezed limes and crushed mint leaves that permeates the air around you when making this recipe; it will make you feel like you’re holidaying on a tropical island. This drink is sweetened with a little maple syrup; however, you could use honey, coconut sugar or rice malt syrup if you prefer. Adjust the amount of sweetener, adding a little less or a little more, to suit your taste.
A tip when making crushed-ice drinks is to ensure that the ice blocks you are using are not too large as this can overload the blades of the Thermomix. I find that ice cubes no bigger than about 4 centimetres in length work best.
- Place lime juice, maple syrup and mint leaves into the Thermomix bowl and mix 8 seconds/speed 10.
- Add the ice cubes and mix 5 seconds/speed 10.
- Pour into a tall glass, top with the coconut water and serve immediately.
