The ultimate on-the-run snack or refreshing summer healthy treat for the whole family, these bring back fond memories of many summers spent eating homemade ice pops around our pool while they dripped all down my arms.

They are full of flavour, protein and fruit, with the addition of spinach. I’m sure all mums will agree that their priority is to get more vegetables into their child’s diet, so the sneaky addition of spinach is a big plus. However, whatever your age it is always important to consume a diet full of fruit and vegetables, so these are perfect for everyone.

Coconut & Lime Smoothie Pop
Ingredients
zest of one lime
1 ripe banana
200 grams coconut milk
1 tablespoon chia seeds
50 grams raw cashews
70 grams water
small handful spinach leaves
Method
  1. Place all ingredients in mixing bowl and mix 1 minute 30 seconds/speed 10.
  2. Pour into moulds and place in the freezer until set.

AND… If you wish, once frozen, remove from the moulds, dip the tip in coconut milk and sprinkle on desiccated coconut.
