We’ve filled Vietnam’s fresh and feisty answer to the French crepe with a vibrant salad of vegetables, herbs and fried tempeh given a zesty lift with quick-pickled carrots. If you like, swap the tempeh for prawns, grilled chicken or pork. This dish can be made suitable for gluten-intolerant people so long as you ensure that ingredients such as cornflour, soy sauce and nuoc mam contain no gluten. The pancakes are traditionally fried on one side only but may be flipped if you wish.
