  1. Ensure the ganache has set quite firm. Placing the ganache in the refrigerator will speed up this process. 
  2. Combine raw cacao and cinnamon in a small bowl.
  3. Using wet hands, roll cooled ganache mixture into balls. Roll each ball in cocoa-cinnamon mixture to coat.   
  4. Truffles will keep in an airtight container for up to 2 weeks.
