Donburi literally means “bowl” but more commonly a “bowl of rice” with an array of additions. What’s common to all is its nourishment, and delicious mix of flavours and textures. A typical donburi consists of rice topped with meat—chicken, pork or beef—and some vegetables. Traditionally, the meat is simmered in a broth, but in this dish we have preferred marinating chicken, and cooking the chicken and vegetables in the Varoma. The burst of flavour comes from the marinade that covers the chicken. The shichimi togarashi, added at the end, gives that extra bit of heat and zing.
