From the classic Bolognese made with lentils instead of pork and veal, it was an easy leap to create a Parma,  without any of the Parmigiano Reggiano, prosciutto, veal or chicken. This is another dish that may have the fine folk  of the Emilia-Romagna choking on their espresso. Then again, this is the food bowl of Italy, and the place of enormous  invention when it comes to cooking and creating great smallgoods, and cheese. And having fun with food.
