Fried calamari

Seafood of all sorts and the deep fryer (or similar) are great friends. In recent times, calamari, coated with batter and deep-fried may have made the top of the pile of favourites. In restaurants, this dish is often served tossed into a salad of rocket, lightly seasoned with lemon juice and extra virgin olive oil. In this case, dipping into a garlic and yoghurt dip makes for a delicious appetiser—fingers preferred to forks!
