Herbed Hollandaise

Yield: approx. 300 grams

Notoriously difficult to make without a Thermomix, hollandaise is essential for eggs Benedict or Florentine and delicious over asparagus, on steamed vegies, as part of a pancake filling or, just quietly, out of the pot with a spoon. Whoever thought of beating more butter than humanly possible into a delicate mixture of herbs and tangy reduction was a genius. Note you must remove the finished hollandaise from the mixing bowl as soon as it is done or the residual heat will continue to cook the sauce and it will curdle or scramble.
