Nobu gives asparagus a Japanese twist in this dish featured in Nobu’s Vegetarian Cookbook (Pie Books, 2014). In the book he fries the asparagus and serves it with this miso dressing. We have instead used the Thermomix to steam the delicate stems but if you would prefer to, you can briefly fry the spears in a few centimetres of vegetable oil.
