This is a classic sandwich/roll from the south of France, and is a keenly sought street food in Nice. Keen cooks will recognise the ingredients in the sandwich are what makes up a salade Niçoise. In this recipe, Yolaine has gone for perfection, making the buns as she prepares the filling. Obviously you can use a bun from your favourite baker, and fill it as below.
