The filling in this recipe calls for Roquefort cheese, a sharp and tangy French sheep’s milk blue cheese, which for many years was impossible to source in Australia because it is a raw milk cheese. It is now available from specialty cheesemongers and some delis but isn’t always easily found. You can substitute another blue cheese such as Gorgonzola or Stilton.
Any shape, size or stuffing (sweet or savoury) may be used—but refrain from overfilling the turnovers. Seal them carefully and tightly to prevent the filling from bursting out while baking.
