Pecan Pie Slice

Time: 5 minutes in the Thermomix; 3 hours 30 minutes freezing
Yield: 20 pieces
BASE
160 grams raw almonds
75 grams shredded coconut
30 grams raw cacao
8 medjool dates, pitted
1 pinch salt
FILLING
125 grams cashews, soaked in boiling water for 30 minutes
6 medjool dates, pitted and soaked in boiling water for 30 minutes
100 grams peanut butter
60 grams maple syrup
1 pinch salt
TOPPING
100 grams sugar-free dark chocolate
40 grams chopped pecans
Method
  1. Line a slice tray (28 centimetres x 17 centimetres) with baking paper.
  2. Add all base ingredients to mixing bowl and chop 20 seconds/speed 8.
  3. Press into the tray so it is nice and firm, set aside.
  4. Place all filling ingredients in mixing bowl and mix 45 seconds/speed 8, scrape down sides of mixing bowl.
  5. Mix 30 seconds/speed 7. Scrape down sides of mixing bowl and repeat until the mixture is smooth.
  6. Pour on top of the base and place in the freezer for 30 minutes.
  7. Place chocolate in mixing bowl and melt 3 minutes/70 degrees/speed 1.
  8. Pour on top of the filling and quickly sprinkle with the chopped pecans. Place in the freezer for a few hours or overnight if possible.
  9. Cut into squares. Store in refrigerator for up to 2 weeks or in freezer for 2 months.
