Pierogi are an eastern European dumpling, with many sweet or savoury variations. My husband has a Polish background and says these are like what his babcia (grandma) used to make—big call. There wasn’t ever a family lunch or dinner where pierogi wasn’t served, whether as a side dish with chicken schnitzel and Polish sausage, or in soup such as borscht. These dumplings may seem time-consuming but they freeze beautifully and will make all your effort worthwhile. Leftover stock from the beef can be frozen and kept to make delicious casseroles or soup, another great way to get the most from your Thermomix.
