Ratatouille… the name is music to my ears. I could eat it every day of the week and never get sick of it. This eggplant casserole dish with zucchini, capsicum, tomato, onion and a bunch of aromatic herbs is the essence of Provence and will fill your kitchen with the most wonderful scents.
Julia Child cooks each element separately to keep each vegetable’s shape or character. I find this Thermomix version a great compromise. The eggplant and zucchini are macerated in a little salt to draw out moisture and bitterness before being sautéed prior to adding to the stew, which helps develop their individual flavours and retain their shape.
