Raw desserts have become all the rage in recent years in trendy cafés around Australia as we look for healthier options. These simple, no-bake raw chocolate tarts are full of beautiful, wholesome ingredients like cashews, almonds, raw cacao powder and coconut cream. When combined they create delicious chocolate-crusted tarts filled with a smooth chocolate cream.
Raw cacao, which is used in this recipe, is often mistaken for cocoa powder—which, while looking similar, is not quite equal in terms of health benefits. Raw cacao powder is made by cold-pressing cocoa beans whereas cocoa powder is made by roasting the beans. It is a faster processing method but reduces the nutritional value of the end product. If you don’t have any raw cacao powder you can use cocoa and the taste will be very similar.
