Rhubarb Meringue

Move over lemon meringue, we have a new kid on the block. This recipe has always been a favourite of mine, first because I am addicted to rhubarb but also because when it comes in season, it means spring is here and summer on its way. Like its citrus counterpart, this dessert offers a soft contrast of delicate acidity from the fruit, along with crunch and sweetness from the speculoos biscuits and Italian meringue. This version is made in individual ramekins but you may choose to make a single larger tart by using the compote and meringue components in blind-baked shortcrust pastry.
