Method
  1. Pour 500 grams of water into the Thermomix bowl, and heat the water 7 minutes/Varoma until it’s boiling away.
  2. Lightly oil the Varoma tray, place the fillet skin-side down, and steam the fish for 3-4 minutes/Varoma. It’s not all about timing: take a peek to observe the change of colour. The aim is to keep the fish on the orange side of pink.
  3. Serve any way you prefer. We prefer it simple, with lemon juice and a little soy, with mashed potatoes.

Cooking the skin

Ease the skin away from the flesh of the salmon, taking care not to tear the skin. Scrape off any excess flesh. Allow to cool. Heat a smear of vegetable oil in a pan until quite hot, but not smoking hot. Add the skin, skin-side down. Cook until crisp—it will spit as would a bacon slice. After 30 seconds, turn and repeat. Remove, drain on paper towel, add flakes of sea salt, and serve any way you like; it’s particularly delicious flaked and sprinkled over the cooked salmon pieces.
