It seems Australians are loving the big smoky flavours that are popular in American cooking. This recipe is a must-have during summer and gets its smoky bang from the type of paprika. Smoked paprika is easily found at any supermarket, though you will find the flavour a lot more intense and sophisticated from a good quality spice company. The mixture can be used as a dry rub or mixed with oil and our Barbecue Sauce (this page/opposite) for a wet rub, usually grilled at high temperatures.
