Cold winter nights call for a warm and nourishing soup with maximum flavour, all whipped up with minimum effort. This recipe is what I like to call a ‘one bowl wonder’, requiring nothing more than a single round in the Thermomix. It’s likely you’ll have these ingredients on hand, perhaps other than the sweet potato, which can be substituted with carrot or pumpkin as the pantry or season dictates. Harissa paste, an aromatic blend of chili and spices, adds real heat to this dish so it might be wise to decrease the amount if serving to children.
- Place onion and garlic in mixing bowl, chop for 5 seconds/speed 5. Scrape down sides with spatula.
- Add olive oil, and saute for 5 minutes/120 degrees/speed 1.
- Add sweet potato, lentils, water, coconut milk, stock concentrate, harissa paste, cumin and coriander, cook for 20 minutes/90 degrees/speed 2.
- Puree for 30 seconds, increasing speed slowly from speed 1-9. Taste for seasoning and add salt as needed. Serve with additional harissa paste or chilli flakes and crusty sourdough.
