Tandoori Paste

Time: 10 minutes prep; 12 minutes in the Thermomix
Yield: 350 millilitres
Dry Ingredients
2 teaspoons coriander seeds
2 teaspoons cumin seeds
1 cinnamon stick, broken up
½ teaspoon black peppercorns
2 dried bay leaves
2 tablespoons ground sweet paprika
1 tablespoon ground turmeric
1 teaspoon salt
Wet ingredients
2 cloves garlic, peeled
20 grams long red chillies, seeds removed
40 grams fresh ginger
40 grams vegetable oil
200 grams thick natural yoghurt
  1. Place the coriander and cumin seeds, cinnamon stick, peppercorns and bay leaf into the Thermomix bowl. Toast 5 minutes/Varoma/speed soft.
  2. Add paprika, turmeric and salt then toast again 5 minutes/Varoma/speed soft.
  3. Mill 1 minute/speed 9, scrape down the bowl and the lid and repeat.     
  4. Then add all the wet ingredients and blend 1 minute/speed 9.
